If I have a bounding box of an object, can I convert that into a polygon annotation?

Yes, you can convert a bounding box into a smart polygon (which you can adjust later as needed) by right-clicking an annotation and clicking on “Convert to Smart Polygon”
You can also click on the menu in the upper right corner of an image and select the option to “Convert Boxes To Smart Polygons” in order to apply this to all the bounding box annotations in an image.
