FPS on OAK Camera

Hello I am interested in following the guide Raspberry Pi and Luxonis OAK to Deploy Vision Models . Before I spent the money on the camera I reached out to Luxonis OAK (as 100 fps seemed high to me compared to what they where getting on previous YOLO models. Thought it would be around 30ish) and asked what FPS they where getting with YOLOv7-tiny. They said that they only got around 25 fps. I am wondering how you where able to object track at 100 fps (anything special like skipping frames)? Do you have a video of it running on the RPi4 at 100 FPS? I understand that both cameras mention in the article can run at over 100 fps. Just trying to figure what the difference in testing.
